Soup's ON!

I got the call at 3:09 telling me classes were canceled! WOOT! WOOT! Earlier today I cut the florets off of the broccoli and had these huge stalks left over. I decided to throw them in a pot with some water to make some vegetable broth/stock. I also added an onion, some really wilted celery, a couple of cloves of garlic, and half a bag of spinach that has maybe another day. I simmered it all day covered. When the call came in, I decided to make soup. I had about 6 sweet potatoes that needed to be used.

I sauteed some onion and garlic in a very small amount of olive oil. Then I added the potatoes. I strained the vegetables, adding all of the broth to the potatoes. Then I added 16 oz of tomato sauce. I added a bag of frozen corn, some frozen snap peas, a 16 oz can of garbanzo beans, can of black beans and a can of butter beans. SNOWmyGOODness was it delicious! Sweet, yet savory. The only "spice" I added was a tablespoon of black pepper and a teaspoon of kosher sea salt. That is it for the entire pot! It didn't need anything else. The flavors were distinct and popped!

It is really coming down right now. I might get all of my gear on in a little bit, put on the snowshoes and have hubby get a picture for Polar's Mom. (I think she digs me!)
